Smashed Avocado Egg Toast

 

Serves 2 I 5 Mins Prep + 5 Mins Cook

INGREDIENTS

½ ripe avocado

2 hard boiled eggs

1 tablespoon low fat mayonnaise

2 slices sourdough bread, toasted

Pinch of chilli flakes

Pepper to taste

INSTRUCTIONS

  1. In a small bowl, mash the avocado, and then mash in the hard-boiled eggs. Add the mayonnaise and mix until well-combined.

  2. Spread the avocado and egg mixture evenly over the toasted sourdough bread slices.

  3. Sprinkle chilli flakes and pepper on each slice, to your liking. Finally, serve and enjoy your delicious and nutritious breakfast
