Chicken Zucchini Fritters

INGREDIENTS
2 Medium Zucchini, grated
500g Chicken Mince
¼ tsp Freshly Cracked Pepper
¼ cup Chives, finely sliced
1 Large Egg
2 Garlic Cloves, crushed
125g Ricotta Cheese
INSTRUCTIONS
- Place grated zucchini in a colander with 1 tsp salt and let stand for 10 minutes. Then squeeze out as much juice as you can from your zucchini. Transfer the drained zucchini into a bowl.
- Add chicken, pepper, chives, egg, garlic and egg to the bowl and combine well.
- Heat a large non-stick frying pan over medium heat and add 1 tbs olive oil. Place a heaped tablespoon of the mixture into your hand and form a round patty about 1 cm.
- Cook 4 patties at a time. Cook on frying pan for 3 minutes, then turn over and cook for another 3 minutes or until cooked through. Transfer to a wire rack to cool. Repeat.
- Serve with a salad.
