This Mediterranean-inspired salad is bursting with flavour — juicy grilled chicken, creamy avocado, fresh veggies, and a zesty herbed dressing. It’s colourful, nourishing, and full of textures that make every bite satisfying, while still being light and energising for lunch.
Rub chicken breast with olive oil, garlic, oregano, smoked paprika, and pepper. Set aside for 10 minutes if time allows.

Cook chicken on a grill pan or barbecue over medium heat for 4–5 minutes each side, or until cooked through. Slice into strips.

In a large bowl, combine lettuce, cherry tomatoes, cucumber, onion, avocado, olives, and parsley. Add the sliced chicken to the salad, drizzle with dressing, toss gently, and enjoy.
