Instructions

Step 1

Heat oven to 180°C (160°C fan forced) and line a small slice tin (20 × 20 cm) with baking paper.

Step 2

Combine olive oil, egg, and vanilla in a small bowl and mix until well combined.

Step 3

Stir in oats, flour, and baking soda to form a thick mixture.

Step 4

Fold through dates, almonds, and chocolate chips until evenly combined.

Step 5

Press the mixture firmly into the prepared tin and smooth the top.

Step 6

Bake for 18–20 minutes, until just set in the centre.

Step 7

Allow to cool completely in the tin before slicing. Store in an airtight container.
