Instructions

Step 1

Preheat oven to 160°C fan-forced (or 180°C conventional). Lightly spray a loaf tin and line with baking paper.

Step 2

In a medium bowl, combine flour and sugar. Stir in melted butter, eggs, and mashed banana until smooth. Gently fold through blueberries.

Step 3

Pour mixture into prepared tin and bake for 30–35 minutes, or until a skewer inserted into the centre comes out clean. Cool slightly before slicing.
