Anzac Bliss Balls

Instructions

Step 1

Place dates in a medium bowl and cover with . cup boiling water. Soak the dates for 10-15 mins, or until soft. Meanwhile, preheat a large non stick frying pan over medium to low heat; add seeds and toast for 2 to 3 mins, stirring every 30 seconds.

Step 2

Place coconut, cashews, pepitas and sunflower seeds into a food processor, and blitz to a fine crumb. Add dates including the soaking water and vanilla. Blitz again until mixture is well combined.

Step 3

Transfer the mixture to a medium bowl , and using your hands, stir in oats, until well combined.

Step 4

Shape spoonful of the mixture into 16 balls (approx. 20g each) and place them on a lined baking tray. Refrigerate for 10 minutes. Then store in an air-tight container until ready to eat.
