Chicken Zucchini Fritters

Instructions

Step 1

Place grated zucchini in a colander with 1 tsp salt and let stand for 10 minutes. Then squeeze out as much juice as you can from your zucchini. Transfer the drained zucchini into a bowl.

Step 2

Add chicken, pepper, chives, egg, garlic and egg to the bowl and combine well.

Step 3

Heat a large non-stick frying pan over medium heat and add 1 tbs olive oil. Place a heaped tablespoon of the mixture into your hand and form a round patty about 1 cm.

Step 4

Cook 4 patties at a time. Cook on frying pan for 3 minutes, then turn over and cook for another 3 minutes or until cooked through. Transfer to a wire rack to cool. Repeat.

Step 5

Serve with a salad.
