Instructions

Step 1

Mash the banana in a bowl until smooth. Whisk in the egg, then stir through the flour until well combined. Set aside for 5 minutes.

Step 2

Lightly spray a non-stick frying pan with olive oil and heat over medium heat. Spoon 2 tablespoons of batter into the pan and spread out until about ½ cm thick.

Step 3

Cook for 1–2 minutes, or until golden. Flip and cook for another 1–2 minutes, or until cooked through. Repeat with the remaining batter to make 2 more pancakes.

Step 4

Serve warm with fresh berries and a tablespoon of low-fat Greek yoghurt, if desired.
