Beef Mince & Pea Curry

INGREDIENTS

400g lean beef mince

1 tbsp oil

1 onion, finely chopped

2 garlic cloves, crushed

2 tbsp korma paste

400g can diced tomatoes

1 large carrot, peeled, chopped

1 large, zucchini, chopped

1 cup frozen peas

INSTRUCTIONS

1. Heat a large non-stick frying pan over medium-high heat and spray with oil. Add onion; cook; stirring for 3 to 4 mins or until soft. Add garlic; cook for 1 min. Then add korma paste and cook for further minute or until fragrant.

2. Add beef; cook, stirring, breaking up the beef for 4 mins or until browned. Add tomatoes, carrot & zucchini and bring to the boil.

3. Reduce heat to medium. Cook, uncovered for 5 mins. Stir in peas & cook for 1 min.
