Anzac Bliss Balls

Ingredients

1/2 cup pitted dates

1/4 cup shredded coconut

1/2 cup raw cashews, unsalted

1/4 cup toasted pepita seeds (pumpkin)

1/4 cup toasted sunflower seeds

1 tsp vanilla essence

1 cup traditional rolled oats

Instructions

1. Place dates in a medium bowl and cover with . cup boiling water. Soak the dates for 10-15 mins, or until soft. Meanwhile, preheat a large non stick frying pan over medium to low heat; add seeds and toast for 2 to 3 mins, stirring every 30 seconds.

2. Place coconut, cashews, pepitas and sunflower seeds into a food processor, and blitz to a fine crumb. Add dates including the soaking water and vanilla. Blitz again until mixture is well combined.

3. Transfer the mixture to a medium bowl , and using your hands, stir in oats, until well combined.

4. Shape spoonful of the mixture into 16 balls (approx 20g each) and place them on a lined baking tray. Refrigerate for 10 minutes. Then store in an air-tight container until ready to eat.
