Instructions

Step 1

Preheat oven to 200°C. Toss sweet potato, zucchini, capsicum, broccoli, and onion with half the olive oil and pepper. Roast for 20 minutes until tender. In the last 2 minutes, add spinach to the tray to wilt.

Step 2

Meanwhile, heat the remaining oil in a saucepan over medium heat. Add mince and cook until browned. Stir in cumin, cinnamon, smoked paprika, garlic powder, and chilli flakes. Cook for 2–3 minutes until fragrant and fully cooked through.

Step 3

Divide roasted vegetables and sweet potato into 4 bowls. Top each with spiced mince, 30 g cottage cheese, avocado slices, and drizzle with ½ teaspoon maple syrup. Garnish with lime or coriander if desired.

350 g lean ground beef mince

2 teaspoons ground cumin

½ teaspoon ground cinnamon

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon chilli flakes

Black pepper, to taste

Chilli tomato sauce

1 medium sweet potato (about 200 g), diced small

1 medium zucchini (about 200 g), diced

2 medium capsicums (any colour), sliced

1 large broccoli head (about 200 g), cut into florets

1 small red onion, sliced

2 cups baby spinach

½ small avocado (about 60 g), sliced

½ cup low-fat cottage cheese (about 120 g)

2 teaspoons olive oil

Toppings

2 teaspoons maple syrup (½ teaspoon per bowl)

Fresh lime wedges or coriander leaves (optional)
