This meal is the perfect mix of flavour and nourishment. Packed with protein, fibre, and plenty of colourful vegetables, it’s quick to prepare and a tasty weeknight meal that feels both satisfying and good for you.
Preheat oven to 200°C. Toss sweet potato, zucchini, capsicum, broccoli, and onion with half the olive oil and pepper. Roast for 20 minutes until tender. In the last 2 minutes, add spinach to the tray to wilt.

Meanwhile, heat the remaining oil in a saucepan over medium heat. Add mince and cook until browned. Stir in cumin, cinnamon, smoked paprika, garlic powder, and chilli flakes. Cook for 2–3 minutes until fragrant and fully cooked through.
Step 3
Divide roasted vegetables and sweet potato into 4 bowls. Top each with spiced mince, 30 g cottage cheese, avocado slices, and drizzle with ½ teaspoon maple syrup. Garnish with lime or coriander if desired.
