Instructions

Step 1

Whisk all sauce ingredients together in a jug until smooth. Set aside.

Step 2

Heat 1 tbsp oil in a very hot wok or large frying pan. Add beef in batches, making sure not to overcrowd the pan. Stir-fry for 1–2 minutes until just cooked, then remove to a plate.

Step 3

Add remaining oil to the pan. Add garlic and ginger and cook for 30 seconds until fragrant.

Step 4

Return beef to the pan. Pour in the sauce and cook for 1–2 minutes until thickened and glossy. Remove from heat and cool completely before freezing.

Step 5

Bring a pot of water to the boil. Add broccoli and cook for 1–2 minutes until just bright green.

Step 6

Drain immediately and rinse under cold water to stop the cooking. Drain well, then cool completely before freezing separately.

To serve or freeze

Serve immediately with rice or noodles, combining beef and broccoli in the pan to heat through.


Or freeze beef and sauce in one container and broccoli in another. Freeze for up to 2 months.

To reheat

Defrost overnight in the fridge. Reheat beef and sauce first until hot, then add broccoli and toss briefly to warm through.

500 g beef, thinly sliced

3 cups broccoli florets

1 tbsp vegetable oil

3 cloves garlic, minced

1 tsp fresh ginger, grated

½ cup beef stock

3 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp brown sugar

1 tsp rice vinegar (or white vinegar)

1 tsp sesame oil

1 tbsp cornflour mixed with 2 tbsp water
