Baked Blueberry Oatmeal Cups

Instructions

Step 1

Preheat oven to 180C and spray a 12-cup muffin pan with cooking oil. Then in a large bowl, combine oats and baking powder.

Step 2

In a separate bowl whisk together milk, eggs, honey and vanilla until evenly mixed. Pour the mixture into the oats and stir until all oats are coated. Then stir in blueberries.

Step 3

Fill each muffin cup evenly with the oats mixture, including the liquid.

Step 4

Bake for 20-25 minutes until the top of the oats are lightly brown and the oats are cooked through. The interior of the oat cups should be soft.

Step 5

Loosen the oat cups with a spatula and remove them from the pan. Allow the cups to cool by placing them on a wire rack. Lastly, you can store the oatmeal cups in the fridge or freezer for later.
