Christmas Salad Wreath

INGREDIENTS

2 baby cos lettuces, shredded

1 avocado, diced 1

small green and 1 small red apple, cored, very thinly sliced

75g goat’s cheese, crumbled

Lemon juice

¼ cup walnuts, roughly chopped

2 tbsp pomegranate seeds

¼ cup fresh flat-leaf parsley, chopped

Dressing

3 tbsp white wine vinegar

1 tbsp honey

1 tsp wholegrain mustard

2 tbsp olive oil

INSTRUCTIONS

1.  In a small bowl, place avocado and apples. Squeeze over lemon juice and toss lightly. Set aside.

2.  In a small serving bowl, whisk the dressing ingredients with some freshly grounded black pepper.

3.  On a large serving platter or board, arrange lettuce, avocado and apple in a round wreath shape. Scatter over cheese, pomegranate, nuts and parsley.

4.  Place a bowl of dressing in middle of wreath and drizzle some over the salad.
