|2 Large red onions, sliced finely|
|1 Tablespoon Olive oil|
|1 Teaspoon Brown sugar|
|1 Tablespoon Balsamic vinegar|
|Freshly cracked pepper|
- Heat a large non-stick frying pan and add olive oil and onion, and cook over a low heat, stirring occasionally for 10 minutes. Add sugar and vinegar and continue stirring for another 5 minutes or until the onion is soft.
- Make four indentations in the onion with a back of spoon. Crack an egg into each one. Cover and cook over low heat until the egg whites are cooked through and the yolk is soft.
- Serve the onion and egg immediately with freshly cracked pepper and a slice of crusty bread.
