Caramelized Onion with eggs

Ingredients

2 Large red onions, sliced finely
1 Tablespoon Olive oil
1 Teaspoon Brown sugar
1 Tablespoon Balsamic vinegar
4 Eggs
Freshly cracked pepper

Instructions

  1. Heat a large non-stick frying pan and add olive oil and onion, and cook over a low heat, stirring occasionally for 10 minutes. Add sugar and vinegar and continue stirring for another 5 minutes or until the onion is soft.
  2. Make four indentations in the onion with a back of spoon. Crack an egg into each one. Cover and cook over low heat until the egg whites are cooked through and the yolk is soft.
  3. Serve the onion and egg immediately with freshly cracked pepper and a slice of crusty bread.
